Place in a warm place for an hour and a half, until the dough increases in volume by about three times.Divide the finished dough into three parts and roll them into balls – these will be the bases for pizza. On a floured surface, form a tortilla with your hands, slightly separating the future sides of the pizza with your fingers.Traditionally, the pizza dough is gradually stretched on the knuckles of the hands by scrolling the tortilla in a circle. You've probably seen it in restaurants or movies. Thanks to the density of the dough and such manual stretching, the middle of the pizza becomes thin, but strong, and the sides are more lush and crispy.Preheat the oven to 250 degrees. Grease a baking sheet with olive oil. Place the stretched tortilla on a baking sheet, brush with the sauce, spread out the desired ingredients in one layer and sprinkle with grated mozzarella cheese on top. Bake for about 10 minutes. In real Italian restaurants, pizza is baked in wood-burning stoves and on hot stones, which gives it a special taste. It is most convenient to cut the pizza with a special knife in the shape of a disk.
